Rancho Gordo Forever!

I made my first youtube video for this recipe, nothing ambitious but I've really wanted to start uploading for a while. I have plenty of footage, this is just what I happened to edit and get around to posting today. I'd eventually like to do an Imamu room-style video with little talking but subtitles to make a hybrid vlog post, I've always found her videos very calming.

Anyway this is a great recipe to make to incorporate more pulses into your diet. Fake meat sucks, legumes is where it's at.


  • 2 links of lap cheong (chinese sausage) 🌱 or sub with mushrooms and add a tbsp of oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2-3 celery stalks, chopped
  • at least 4 cloves minced garlic
  • 1 tbsp tomato paste
  • half a big can of diced tomatoes
  • 1 cup rancho gordo black caviar lentils, rinsed and picked through
  • 2 cups broth of your choosing
  • 1 cup of water and more later if needed
  • 1 lemon, juiced
    spices: 
  • paprika
  • thyme
  • black pepper
  • white pepper
  • cumin

  1. In a dutch oven add the sausage and render out the fat until browned.
  2. Add in chopped onion, carrot, and celery and cook til onion is transluscent.
  3. Add in garlic and tomato paste, stir and add your spices. Cook for 2 min.
  4. Add in tomatoes, lentils, broth, water, and cover and let simmer on low for 30 min, stirring every now and then just to make sure nothing on the bottom is burning. Add more water if necessary.
  5. After 30 min, test lentils for doneness. Black lentils will not turn to mush like red lentils will, so just decide how firm you like them, then turn off the heat and add the juice of one lemon.
  6. Serve with fresh herbs like cilantro, scallion, etc. I added a fried
    egg and homemade kale chips. G ate his with just the herbs and a lot of sourdough bread.
