At last, the long end-of-year-sprint, traveling-for-the-holidays, NYE-birthday-bash, has finally come to an end. It's January 2023 and there's finally time to relax and readjust to daily life again. The back-to-work-slam has been dealt with. It's time to eat.
This one is a low key lunch for when I'm working from home. It requires premade tea eggs, which need 4-24 hours to marinate before using. I prefers these to poached eggs on my toast because the yolks are still jammy without gushing everywhere as soon as you take a bite. Plus you have that lovely spiced flavor from the marinade.
Makes 2 toasts:
1 avocado
juice from 1/2 lime
whites of 2 scallions, chopped
good olive oil
red pepper flakes, to taste (optional)
2 slices of bread, preferably multigrain or sourdough
toppings:
tomatoes
1-2 premade tea eggs
goat cheese, crumbled
toasted sesame seeds
hot sauce or chili oil
salt and pepper to taste
sprouts (optional)
- toast the bread
- mash avocado with the lime juice, a glug of good olive oil, and the chopped scallion whites. add red pepper flakes if using.
- quarter the eggs and the tomatoes
- spread the avocado mixture on the toast and top with the rest.
