Fancy Avo Toast



At last, the long end-of-year-sprint, traveling-for-the-holidays, NYE-birthday-bash, has finally come to an end. It's January 2023 and there's finally time to relax and readjust to daily life again. The back-to-work-slam has been dealt with. It's time to eat. 

This one is a low key lunch for when I'm working from home. It requires premade tea eggs, which need 4-24 hours to marinate before using. I prefers these to poached eggs on my toast because the yolks are still jammy without gushing everywhere as soon as you take a bite. Plus you have that lovely spiced flavor from the marinade.

Makes 2 toasts:

1 avocado
juice from 1/2 lime
whites of 2 scallions, chopped
good olive oil
red pepper flakes, to taste (optional)

2 slices of bread, preferably multigrain or sourdough

toppings:
tomatoes
1-2 premade tea eggs
goat cheese, crumbled
toasted sesame seeds
hot sauce or chili oil
salt and pepper to taste
sprouts (optional)

  1.  toast the bread
  2. mash avocado with the lime juice, a glug of good olive oil, and the chopped scallion whites. add red pepper flakes if using.
  3. quarter the eggs and the tomatoes
  4. spread the avocado mixture on the toast and top with the rest.
